Handcrafted in Seki City, Japan, Enso handcrafts professional knives that combine the best of advanced technology with the unsurpassed knowledge and expertise of traditional craftsmen. Continuing to pursue new possibilities for kitchen knives in the new era, Enso works on maintaining and improving manufacturing technologies to produce the highest quality products.
The Enso HD Nakiri Knife is a Japanese-style vegetable knife with a straight edge, ideal for cutting through a wide variety of fresh vegetables and making vegetable prep tasks even easier, particularly for stir-fry dishes or salads.
Enso's blades are constructed of 37-layer stainless steel Damascus with a VG-10 steel cutting core, ensuring excellent edge retention. Each blade is heat-treated to a Rockwell hardness of 61 and hand-ground to approximately a 12-degree cutting angle, with a hammered or sashimi finish.
All Enso HD knives feature a black canvas micarta handle with three stainless steel rivets, bolster, and end cap. The enclosed full tang handle construction is seamless, providing strength, durability, and balance.
The double-bevel (50/50) edge is suitable for both right- and left-handed use, and the blade features a machine-pressed blade kanji. The first two Japanese characters of the kanji are "Enso," which means "Harmony" in Japanese, while the last three characters are "Nippon Sei," meaning "Made In Japan."
Enso knives are handcrafted in Seki City, Japan, one of the most popular and renowned sword-making cities in the country. Seki is rich with history and cultural tradition, and the incredible quality of knives produced there is founded in the technology and beliefs of the ancient Seki sword smiths. Today's Seki knifemakers combine knowledge, craft, and tradition to develop the highest quality knives, designed to fit a variety of purposes and lifestyles.
In addition to the Enso HD Nakiri Knife, Enso offers the Enso SG2 Nakiri Knife, which features a SG2 powder steel cutting core with a Rockwell hardness of 63. Both knives offer a double-bevel edge, 12-degree blade angle, and black canvas micarta handles, ensuring exceptional performance and craftsmanship.
